The Pucllana Chili Peppers

Chili peppers are essential elements of our gastronomy nationwide today and they were also essential in the past. Thanks to the excavations at the archaeological site of Pucllana, it has been possible to recover evidence of a wide variety of chili peppers that were cultivated more than 1,500 years ago, among which the most notable are ají limo, ají panca, ají pipi de mono, ají Amarillo, among others. others.
Recent studies have allowed us to demonstrate how in the ceremonies the yellow chili with the greatest heat was the one consumed by the ancient Lima during the ceremonies.
